Job Responsibilities:
- Accountable for the efficient operation of all hospital food production, ensuring quality of raw materials received and meals produced are in accordance with specifications.
- Ensures that all therapeutic/ special meals preparation are aligned to dietetics requirements.
- Ensure kitchen staff follow established health & safety rules and security protocols.
- Ensure personal hygiene, housekeeping and food hygiene standards in the kitchens are compliant with ISO/HACCP standards.
- Ensure all equipment and facilities are kept operationally ready, interfacing with Facilities & Engineering Department stakeholders for any problem resolution.
- Work closely with Food Service Manager and Dietitian in developing creative menu proposals and recipes that are in sync with current market trends.
- Responsible for manpower deployment to maximize efficiency and utilization of available resources, achieving higher work productivity.
- Develop and maintain discipline, good team spirit, correct practices and cooperation amongst staff.
- Provide training and guidance to staff in the preparation of meals to achieve a high professional standard.
- Closely monitors overtime, attendance, food spoilage, butchery transfer, industrial accident and raw material reporting etc
- Ensure raw and cooked food wastage is kept to a minimum and optimum stock level of raw materials and ingredients maintained.
- Ensure that early corrective and/or preventive actions are taken with any feedback or complaints from internal or external customers.
- Ensure that any food-related queries by hospital stakeholders or patients are promptly attended to and addressed/ resolved.
- Undertake any other duties assigned by Food Service Manager.

Salary:
- Up to $6,500 + AWS + Staff Benefits (Medical, Dental, Insurance, Awards, Discounts..etc)

Requirements:
- Min. 10 years of experience as a leader in large culinary operations managing at least 20 staff
- Must have a comprehensive and diverse culinary background, with strong familiarity in local Singaporean cuisine
- Good knowledge in accounting and calculation of food costs
- Ability to identify training gaps and needs within the production team
- Management level representative at industry events and presentations
